METHI MUTHIAS

Muthias are a popular Gujarati snack. This recipe was shared by my friend, Asha Satish Philar who is an expert cook.  Traditionally, muthias are either fried or steamed, but this baked version will appeal in particular to the health conscious who don't have fried food.

I tried this recipe and it came out so well that we have added this to the list of snack items we have with tea in the evenings.

In the picture, I have made the muthias like a bird's nest garnished with roasted peanuts like bird's eggs!




Ingredients:
  • Methi (Fenugreek) leaves, 1 cup
  • Coriander leaves, 1/2 cup
  • Onion, small, chopped fine, 1
  • Lime juice, 1 tsp
  • Green chilli, chopped, 1
  • Ginger, crushed, 1/2 "
  •  Besan 1 cup
  • Atta, 1 cup
  • Salt, to taste
  • Turmeric, a pinch
  • Oil, 1 tsp
 Method:
Mix all the ingredients and knead with a little water to form a smooth dough
Divide the dough into equal portions
Make them into even rounds with a depression in the centre to make it look like bird nests
Place them on a greased baking tray
Preheat oven at 220 degrees Centigrade
Bake for 7-8 minutes

Serve with ketchup or chutney of your choice
