GARLICKY SPINACH RAITA

Today's recipe combines three personal favourites: garlics, spinach and yogurt. This easy to make raita goes great with pulaos. It comes from my friend, Sushma Mallya who did a guest post here some time ago for a delicious Custard Cake.

This recipe from her blog Authentic Food Delights is for Garlicky Spinach Raita which features garlics (which I love), spinach and yogurt. She said this raita was one of her favourites and I can heartily testify that it was amazing!!

Ingredients:
  • Spinach, washed, 2 cups
  • Garlic, finely chopped, 2 cloves
  • Green Chillies, finely chopped, 2
  • Ginger, finely chopped, 1" piece
  • Roasted Cumin Powder, 1/4 tsp
  • Chaat Masala, 1/4 tsp
  • Beaten Unflavored Yogurt, 2 cups
  • White Sesame Seeds, 1 tsp
  • Oil, 2 tsp
  • Salt, to taste 
Method:

Wash spinach in several changes of water. Boil it in water till cooked, then drain and refresh in ice cold water.
Chop this boiled spinach roughly and keep aside
In a pan, add oil. When it gets hot add finely chopped ginger, garlic and green chillies and fry well.
Now add the chopped and boiled spinach and fry well
To this add salt and roasted cumin powder and fry for 1-2 minutes
Now switch off the gas and keep aside.
Allow it to cool completely.
Beat the yogurt, add chaat masala and blend.
Add the spinach and mix well.
Garnish with roasted sesame seeds just before serving.
