CLUSTER BEANS STIR FRY

Cluster Beans (called Gawaar in Hindi, Gorikayi in Kannada, and Mitke Saang in Konkani) is a vegetable that is quite easily available. This article in The Health Site lists some of the health benefits of cluster beans.

Today's dish is an easy to make stir fry which I make quite often. I prefer to use MTR Rasam Powder when making this dish. If you wish, you can use chilli powder instead of rasam powder. When you powder the roasted groundnuts, make sure it is a little coarse so as to get a crunchy feel. You can adjust the quantity of jaggery to suit your taste.



Ingredients:
  • Cluster Beans, 250 grms
  • Mustard, 1/2 tsp
  • Curry Leaves, a sprig
  • Onion, medium-sized, 1
  • Salt, to taste
  • Rasam Powder, 1 and 1/2  tsp to 2 tsp
  • Jaggery, powdered, 1 tbsp
  • Groundnuts, 2 tbsp
  • Oil, 1 tbsp
Method:

Wash the cluster beans, snip off both the ends and cut them into 1/2 inch pieces. Keep aside
Chop the onion
Dry roast the groundnuts, when they cool remove the skin and make a coarse powder from the groundnuts. Keep aside.
Heat oil in a thick bottomed kadhai, and when it gets hot add mustard seeds
When the mustard seeds splutter add curry leaves and saute for a few seconds
Next add the chopped onion and saute till it becomes transparent 
Add the cluster beans, sprinkle a little water and cook covered on medium/low flame
When it is almost cooked, add salt, rasam powder, and the powdered jaggery 
Mix well and cook till the cluster beans are fully done
Finally add the crushed groundnut powder and mix well
Serve hot as a side dish with rice and dal
