SOYA PANEER & CAPSICUM GRILLED SANDWICH

I make sandwiches for breakfast or for an evening snack from time to time. They have the advantage of being easy to make apart from being healthy, tasty and filling. Elsewhere in this blog, you will find recipes for Mint Chutney Sandwich, and Peanut Chutney Sandwich,.

Today's recipe is adapted from  Paneer & Capsicum Grilled Sandwich by Master Chef Sanjeev Kapoor. I have chosen to use Tofu or Soya Paneer which is considered to be more healthy and has many health benefits. If you wish, you can stay with the conventional paneer (cottage cheese) as well.



Ingredients:
  • Soya Paneer (Tofu), grated, 200 gms
  • Capsicum, large-sized, finely chopped, 1
  • Green Chillies, finely chopped, 2-3
  • Roasted Cumin Powder, 1 tsp
  • Chaat Masala, 1 tsp
  • Salt, to taste
  • Bread Slices, 8-10
  • Butter, as required









Method:




In a bowl, mix well together the grated soya paneer, finely chopped capsicum, finely chopped green chillies, roasted cumin powder, chaat masala, and salt to form the filling for the grilled sandwich
Apply butter on four of the bread slices
On each of them add the required amount of the soya paneer filling and spread it out evenly
Cover with the remaining four slices of bread
Apply butter on top of the covered slices of bread
Pre-heat a  a non-stick sandwich griller
Place each of the sandwiches
Close the griller and grill for 2-3 minutes till they turn a golden brown and grill marks appear on them
Remove from the griller, cut into triangles and serve immediately with tomato ketchup
