OKRA & PEANUT STIR FRY

I was attracted to this dish because the combination of okra, also known as ladies' fingers, ( Bhindi in Hindi and Bendaikai in Kannada)  and peanuts was new to me and sounded interesting.

This is adapted from Okra (Vendaikai ) Peanut Curry from Kamala's Corner. It made a tasty accompaniment as a side dish to the main meal.



Ingredients:
  • Okra/Ladies' Fingers, 250 gms
  • Onion, large-sized, 1
  • Garlic Pods, 6
  • Peanuts, 1/4 cup
  • Mustard, 1/2 tsp
  • Black Gram Dal, (Urad Dal), 1 tsp
  • MTR Brand Sambar Powder, 2 tsp
  • Turmeric Powder, 1/4 tsp
  • Oil, 2 tbsp
  • Curry Leaves, a few
  • Salt, to taste
Method:

Wash the okra and pat them dry with a clean kitchen towel
Cut the okra into small rounds and smear salt to the cut okra pieces
Finely chop the onion and the garlic pods
Dry roast the peanuts and keep aside
Heat oil in a thick-bottomed kadhai and when it gets hot add the mustard
When the mustard splutters, add urad dal and the roasted peanuts
Fry until the urad dal turns light brown
Next add the chopped garlic and fry for a few seconds
Add the chopped onion and curry leaves and fry for a few more seconds
Now add the okra and mix it well
Cook covered on low flame till the okra gets done
Add sambar powder and turmeric powder and mix well
Fry till the okra becomes crisp
Serve hot
