CARROT KISMURI
In our Konkani cooking we make many " kismuris" and "pachadis", which are really what you might call salads of one form or the other. With the summer coming up, if you want to whip up a quick, cool salad, here's one for you!
I present to you today this simple carrot based salad known as "Carrota Kismuri" in my mother tongue, Konkani. It's refreshing, colorful, and pretty easy to make. I don't think people will need any cajoling to go for this but in any case, don't forget to tell the kiddies that carrots are good for their eyes:)
Ingredients:
Wash, peel and grate the carrots.
Chop the onion, tomato, and coriander leaves.
Finely chop the green chilllies
In a mixing bowl, lightly crush the green chillies, and mix with salt, and chopped onion
To this add the grated carrot, chopped tomato, chopped coriander leaves and the coconut gratings ( if used)
Mix well and squeeze a little lime juice over the salad.
Mix again and garnish with chopped coriander leaves.
Serve carrot kismuri along with the main meal
