CORN & POMEGRANATE SALAD

I am one of those who believe that the way a dish is presented does a lot to add to its attraction. I particularly love salads because they give you the opportunity to express your creativity more than most other dishes.

I hope you will enjoy this colourful and tasty salad made of frozen corn and pomegranate. This healthy salad sits on a bed of cabbage leaves.




Ingredients:
  • Corn kernels, 3/4 cup ( I have used frozen corn) 
  • Seeds of 1 large Pomegranate
  • Onion, finely chopped, 1/2
  • Green Chilli, chopped, 1
  • Mustard seeds, 1/2 tsp
  • Curry leaves, a few
  • Cilantro or Coriander leaves, finely chopped, 1 tbsp
  • Fresh Grated Coconut, 1 tbsp
  • Salt, to taste
  • Oil, 1/2 tbsp
Method:

Heat oil in a pan and when it gets hot, on medium heat add the mustard seeds. When they splutter,  add chopped onion, chilli and curry leaves and saute till the onions become translucent

Add the corn kernels to the pan and cook for a few minutes until the kernels become soft. Add salt to taste.

Empty the contents of the pan into a bowl. Mix in the pomegranate seeds, coconut gratings and chopped coriander leaves.

Refrigerate the salad and serve chilled on a bed of cabbage leaves.
