MAKAI CHAWAL
"Makai Chawal" is a very easy to make dish of rice, makai or corn, and coriander which can be put together in a jiffy. Whenever I make this I am reminded of the time when we used to entertain much more than we now do. Mrs. Sethi, one of my neighbours, was an enterprising person and very skilled in cooking. I learnt a number of Punjabi recipes, including this one from her. Since then I have found this useful particularly when I needed one more dish on the table or had unexpected guests.
This works great when you already have the main ingredients of cooked rice and frozen corn. It is really a time saver. Of course, you can also make this dish by cooking the rice and cooling it just as you can use fresh corn and cook it.

Ingredients:
- Cooked Rice, 4 cups
- Frozen/Cooked Sweet Corn Kernels, 3/4 cup
- Fresh Coriander, chopped, 5 tbsp
- Oil, 1 tbsp - 1 and 1/2 tbsp
- Garlic Cloves, chopped, 3
- Green Chillies, chopped, 3
- Salt, to taste
- Juice of 1 Lemon
Heat oil in a kadai, add the chopped garlic and saute for a minute till it changes colour and gives off an aroma
Add the chopped green chillies and stir for a minute
Add the frozen/cooked corn kernels, and salt as per your requirement. Saute for a while for the corn to absorb the salt
Now, add the cooked rice, chopped coriander leaves and lemon juice
Mix well and cook for 2-3 minutes, stirring continuously till they are well blended
Serve hot, with a suitable side dish of your choice.
