SWEET IDLI WITH PUMPKIN: GUEST POST BY KIRANMAYI KAMATH

 As followers of this blog know, from time to time, I invite friends to contribute guest posts so that we have greater variety of dishes. Today, my friend, Kiranmayi Kamath, has taken time off her busy schedule to send me this guest post for Sweet Idli with Pumpkin. Here's her recipe:




Ingredients:
  • Medium sized Bansi Sooji, 1 measure
  • Grated Pumpkin, 2 to 2 and 1/2 measures
  • Curds, 1/2 cup
  • Grated Jaggery, 1 measure
  • Salt, a pinch
  • Cashewnuts, chopped, 6-8
  • Raisins, a handful
  • Cardamom Powder, 1/4 tsp
Method:

Dry roast the sooji and let it cool.
In a pan mix the sooji, grated pumpkin, jaggery, curds, raisins, and chopped cashewnuts and salt.
Mix well. The batter should be that of idli batter consistency.
Adjust the sweetness according to your taste.
Let this batter rest for 30 minutes.
Add crushed cardamom. Mix well.
Take the idli moulds, grease them and pour the batter into the moulds and steam them for about 10 minutes.
De-mould the sweet idlis once cool and relish with homemade butter.
