MASALA APPOS

MASALA APPOS

In an earlier post, I have given my recipe for making Appos, a popular breakfast dish, especially in South India. As explained there are several variations of this dish. I was therefore interested to learn from my friend, Rama Kini another interesting variation: this being the Masala Appo, which had a stuffing of vegetables.

It was quite delicious and I would urge you to try this variation when you next make appos.






Ingredients & Method:

For the batter:
  • Urad dal, 1 cup
  • Raw Rice, 2 cups
Soak separately for about 4 hours.
Grind the urad dal to a smooth batter.
Grind the rice to a slightly coarse batter.
Mix the batters together, add salt as required and let it ferment overnight.
The batter is ready the next morning.

For the Stuffing:
  • Onion, 1
  • Potatoes, cooked, 2-3 medium sized
  • Carrot, 1
  • Peas, (cooked/frozen) , 1/4 cup
  • Mustard, 1/2 tsp
  • Jeera, (Cumin seeds), 1/4 tsp
  • Chilli Powder, 1/2 tsp, or to taste
  • Turmeric Powder, 1/4 tsp
  • Amchur (Dry Mango) Powder, 1/2 tsp
  • Garam Masala Powder, 1/4 tsp  (optional)
  • Coriander leaves, chopped fine, 1 tbsp.
Chop the onion
Peel and cut the cooked potatoes into small cubes
Grate the carrot. Keep these vegetables aside.
Heat oil in a kadhai. On medium heat, add mustard seeds and jeera. When they splutter, add the chopped onion and saute till it becomes translucent
Now add the turmeric powder, chilli powder, amchur powder, garam masala (if used), mixed vegetables and salt, to taste
However, when adding salt for the stuffing, do remember that the batter already has salt.
Add a little water and cook for a few minutes keeping the kadhai covered till the vegetables and the spices are well blended
Finally add the chopped coriander leaves and mix well
The stuffing for the appos is ready

To make the Appos:

  • Oil , for making appos.
Heat an appo griddle with a little oil in each of the sockets
Pour about 1 tbsp. of batter in each of the sockets, put 1 tsp of the filling and top it up with some more batter to cover the filling.
Cover the griddle with a lid and cook on medium flame till the appos get done
Now flip the appos, drizzle with oil and cook further for another 1-2 minutes
Remove from the griddle and repeat with the remaining batter
Serve the appos hot, with a chutney of your choice.
