GREEN APPLE SALAD

GREEN APPLE SALAD

Like many others, I too love green apples.  They are pretty expensive as compared to the red apples varieties but I assure you they are well worth the additional cost! More often than not we eat them as such, but here is a recipe for an interesting salad made with green apples.

I tried out this green apple salad recently and it was truly delicious. This recipe is courtesy my friend, Asha Satish Philar, cookery expert and a fine person who is the author of the popular cookery book, "Konkani Saraswat Cookbook."





Ingredients:
  • Green Apple, 1, 
  • Lime juice, a little
  • Raisins, 1 tbsp, soaked in a little warm water
  • Green Chillies, 2, crushed with a little salt
  • Thick curd, 2 cups (not sour)
  • Coriander leaves, chopped, 1 tbsp
  • Salt, to taste
  • Sugar, to taste
For the seasoning:
  • Mustard seeds,1/2 tsp
  • Oil, 1/2 tsp
  • Asafoetida, a pinch
  • Curry leaves, a sprig
Method:

Wash, peel and core the green apple
Cut the apple into small pieces and smear them with a little lime juice to prevent discolouration
Soak the raisins in a little warm water for about 10-15 minutes
Drain the water from the raisins
In a bowl, beat the curd until smooth and add the apple pieces, raisin, crushed green chillies, chopped coriander leaves, and salt and sugar to taste. Keep aside.
To prepare the seasoning :
Heat oil in a pan, and on medium heat add the mustard seeds and when they splutter add the asafoetida and curry leaves and saute for a few seconds
Pour this seasoning over the salad
Mix well and serve.
