AAM KA LASSI

AAM KA LASSI

Since we are now enjoying the mango season, here's another mango-based recipe. This irresistible drink is made of mango and thick yogurt. It is refreshing, looks great and is easy to make. You may like to use Alphonso variety of mangoes for better taste.



Ingredients:
  • Ripe Mangoes, 2, medium-sized
  • Fresh and Thick Yogurt, 1 cup
  • Sugar, 1 and 1/2 tbsp, or as per your preference
  • Milk, 1/2 cup
  • Pistachio & Almonds,chopped, 1 tbsp
  • Mint leaves
Method:
Wash, de-seed and de-skin the mangoes
Cut the mangoes into small pieces
In a blender, blend the mango pieces along with the thick yogurt, sugar and milk
Pour into tall glasses
Garnish with chopped pistachio, almonds and mint leaves
Best served chilled.

CHUTNEY LASSI

Ordinarily we think of lassi - that most refreshing drink made of yogurt - as being either sweet or salty.  We can also add fruits, like mangoes and strawberries when available, to make the lassi more tasty.  Elsewhere in this blog you will find recipes for Aam ka Lassi , and Strawberry Lassi,.

I came across this recipe for an interesting and refreshing drink "Chutney Lassi" in the website of Master Chef Sanjeev Kapoor. I was intrigued by the name and the ingredients and made it as soon as I could.

Believe me, it was great! It turned out to be nice and spicy complemented with the flavour of fresh mint. It was a refreshing option for a hot summer's day.




Ingredients:
  • Yogurt, 2 and 1/2 cups
  • Fresh Mint Leaves, chopped, 12-15
  • Fresh Coriander Leaves, 1/4 bunch
  • Ginger, chopped, 1/2 " piece
  • Green Chilly, chopped, 1
  • Small Raw Mango, de-seeded and sliced, 1/2
  • Salt, to taste
  • Black Salt, (Kala Namak), to taste
  • Roasted Cumin Powder, (Jeera Powder), 1 tsp
  • Ice Cubes, as required
Method:

In a mixer, grind together the mint leaves, coriander leaves, ginger, green chilly, raw mango, salt, black salt,  and roasted cumin powder to a fine paste, adding a little water or yogurt water
To this paste, add the yogurt, 1 cup of water and a few ice cubes
Blend this again and then place in the refrigerator
Serve chilled in tall glasses

STRAWBERRY LASSI

STRAWBERRY LASSI

This season we got plenty of strawberries in Bangalore. Most of them seem to come from Mahabaleshwar in Maharashtra  which brought back many happy memories of our days in Pune. We used to drive up to Mahabaleshwar and no trip was complete without coming back loaded with strawberries and chikkis!

Starwberry Lassi is very easy to make and tastes great too. It is most reinvigorating as it has the goodness of yogurt and milk with the  taste of the delicious strawberries.

As you know strawberries are a good source of antioxidants so this makes for a healthy drink as well.




Ingredients:
  • Strawberries, 8-10
  • Full Cream Milk, 1/4 cup
  • Sugar, 2 tbsp or as per taste
  • Fresh Yogurt, 1 cup
Method
Wash the strawberries and keep 2-3 strawberries aside for the final decoration
Remove the leaves and chop the remaining strawberries
Blend the strawberries with sugar in a blender for half a minute
Add the full cream milk and blend it once more for half a minute
Next add the yogurt and blend for 1 more minute
Pour into tall glasses and serve chilled, decorated with cut strawberries.
