PAPAYA PUDDING


PAPAYA PUDDING

Thanks to my friend,Sandhya Puranik for pointing out this recipe to me. This dessert is relatively easy to make. 


The amount of sugar you use will depend on both the sweetness of the papaya you have chosen and how much sweetness you like in the dish.


Papaya is a fruit with many health benefits as given in The Health Site 

For me personally, the biggest certificate for this pudding came from my husband. He hated papaya all his life but on eating this he not only liked it but asked me to make it more often!!


Ingredients:


  • Ripe Papaya, 4 cups
  • Milk, 2 tbsp
  • Sugar, 3 tbsp, or as per taste
  • Vanilla Essence, 1/2 tsp
  • Almonds, a few, for garnishing
Method:

Wash, peel and cut the ripe papaya
Ensure that the skin is fully peeled and that the seeds and fibrous parts adhering to the seeds are removed completely. This will avoid any bitterness from them.
In a mixer, blend half the quantity of the papaya pieces
Now add the other half and blend this
Add milk, sugar and vanilla essence
Blend together to a smooth puree
Grease the jelly mould or similar dish
Pour the papaya puree into the greased mould
Cover this with a plastic/cling wrap and refrigerate for 4-5 hours or till it is set
There is no need to keep it in the freezer for setting
Remove after it is set, pass a knife around the edges of the container and de-mould by inverting it
Garnish before serving
Here I have chosen to garnish with almonds
