GULLA MASHINGASAANGA TALASANI

GULLA MASHINGASAANGA TALASANI

Today's recipe is from our own GSB Konkani cuisine and is called Gulla Mashingasaanga Talasani. The name comes from the two main ingredients: Matti Gulla ( a special kind of brinjal) and Drumsticks ( which we call Mashingasaang, in my mother tongue, Konkani.

Many of us consider Gulla/Brinjal and Drumsticks to be a good combination!  This is an easy to make stir fry which is usually served with our traditional meal of rice and dalithoi.

For those who may not know, Matti Gulla is a special type of brinjal/eggplant/aubergine available in the Udupi area of my Home State of Karnataka. Tradition has it that the first crop of Matti Gulla ( named after a place called Matti, near Udupi) is offered at the Udupi Sri Krishna Temple.

Elsewhere in this blog, you will find recipes for dishes made with Matti Gulla, such as:-

We enjoyed this dish recently when I was happy to see some Matti Gulla in the nearby Mangalore Stores.

Ingredients:-

  • Matti Gulla, 2
  • Mashingasaang ( Drumsticks), 2
  • Garlic Cloves, 10-12
  • Dry Red Chillies, 3 -broken into halves
  • Coconut Oil, 2 tbsp
  • Salt, to taste

Method:-

Wash the gulla. Remove the stalks and cut them into pieces. Immerse these pieces in fresh water till they are used in this recipe- in order to avoid discolouration
Peel the drumsticks and cut them into 1 and 1/2 " pieces.
Crush the garlic cloves lightly

Heat oil in a thick bottomed kadai. Add the lightly crushed garlic cloves and saute them till they give off a good aroma and turn golden brown in colour.
Next add the broken red chillies and saute for a few seconds.
To this add the cut gulla pieces and the drumsticks pieces, mix and add salt to taste and saute for a couple of minutes
Now add  1/3 cup of water
Cook covered on medium heat, stirring from time to time, till the gulla and drumsticks are done
Once the gulla and drumsticks are cooked and the excess water has evaporated, switch off the gas and transfer to a serving bowl
Serve as a side dish with the main meal

GULLA MASHINGASAANGA SAGLE

 GULLA MASHINGASAANGA SAGLE

Today's recipe is from our own GSB Konkani cuisine and is called Gulla Mashingasaanga Sagle. The name comes from the two principal ingredients: the first is Matti Gulla, ( a special type of brinjal available in the Udupi area of my Home State of Karnataka). Tradition has it that the first crop of Matti Gulla ( named after a place called Matti, near Udupi) is offered at the Udupi Sri Krishna Temple.

What is called aubergine or eggplant abroad, is more commonly called brinjal in India. Call it what you will, we make much use of it in our Indian cuisine. Brinjals  are strong in antioxidants and Vitamin A and C and have numerous health benefits.  They are available in different sizes and forms, ranging from the cute baby brinjal to the voluminous balloon brinjal.

Elsewhere in this blog, you will find recipes for dishes made with Matti Gulla such as:-

The second ingredient is Drumsticks, which we call, "Mashingasaang" in my mother tongue, Konkani.

Gulla Mashingasaanga Sagle can be made with or without using onions. I prefer using onions as I feel they enhance the taste of this dish.  This is generally served with our traditional meal of rice and dal. It also goes well with rotis/chapatis too.

We love this dish and if you able to get hold of Gullas, I hope you will try it out sometime.

Ingredients:-

  • Gulla, 2, about 350-375 gms
  • Mashingasaang, (Drumsticks), 2
  • Onions, medium-sized, 2
  • Fresh Coconut Gratings, 1 cup
  • Byadgi Red Chillies, 5
  • Coriander Seeds, 2 tsp
  • Methi ( Fenugreek) Seeds, 1/4 tsp
  • Tamarind, size of a small marble
  • Coconut Oil, 2 tbsp
  • Salt, to taste

Method:-

Wash the gulla, remove the stalk and cut them into bite size pieces
Immerse them in water to prevent discolouration
Wash, peel and cut the drumsticks into 1 and 1/2 " pieces
Peel and chop the onions
Heat a tsp of oil and roast the coriander seeds and methi seeds on medium heat till they turn golden in colour
Also roast the Byadgi red chillies till they become crisp

In a mixer jar, grind together the coconut gratings, roasted red chillies, and tamarind along with the roasted coriander seeds and methi seeds to a coarse paste adding just the required amount of water

Heat oil in a thick bottomed kadhai and saute the onions till they become slightly golden in colour
To this add the drumstick pieces and gulla pieces, add salt to taste and mix well
Saute for 1-2 minutes
Now add about 1/2 cup of water and cook covered till it is almost cooked
Add the freshly ground masala, mix well and cook on medium heat for about 5 minutes till it gets well blended and gets a semi-solid consistency
Check for salt and add only if required
Switch off the gas and transfer to a serving bowl
Serve as an accompaniment with hot steamed rice and dalithoi

MATTI GULLA HULI

 MATTI GULLA HULI

Matti Gulla is a special type of brinjal available in the Udupi area of my Home State of Karnataka. In India, it's commonly called the brinjal, while as abroad it is more usually called the eggplant or the aubergine. Call it what you will, we make much use of it in our Indian cuisine.

Brinjals  are strong in antioxidants and Vitamin A and C and have numerous health benefits.  They are available in different sizes and forms, ranging from the cute baby brinjal to the voluminous balloon brinjal.

Elsewhere in this blog, you will find recipes for different dishes made with brinjals, such as:-

Tradition has it that the first crop of Matti Gulla ( named after a place called Matti, near Udupi) is offered at the Udupi Sri Krishna Temple.

Today's recipe is for a dish made withe very same Matti Gulla. It is for a Udupi-style Huli/sambar called Matti Gulla Huli. I have adapted this from the YouTube video Udupi Style Gulla Huli of Sudha's Kitchen.

Notes:-

  • This recipe assumes you have cooked toor dal ready.
  • We use the long green chillies which are less spicy for this dish.
  • It is preferable that you use coconut oil for best result, but any other cooking oil will do

We enjoyed this very much for lunch with hot steamed rice.

Ingredients:

  • Matti Gulla, 2
  • Tamarind - size of a lemon
  • Turmeric Powder, 1/4 tsp
  • Jaggery, a small lemon sized ball
  • Green Chillies, 4
  • Coriander Leaves, 2 tbsp
  • Curry Leaves, a sprig
  • Asafoetida, 1/8 tsp
  • Cooked Toor Dal, 1/2 cup
  • Salt, to taste

To Be Dry Roasted & Ground To A Powder:-
  • Urad Dal, 1 tbsp
  • Coriander Seeds, 2 tbsp
  • Cumin Seeds, 1 tsp
  • Fenugreek Seeds, 1/2 tsp
  • Byadgi Red Chillies, 7-8
For The Seasoning:-
  • Mustard Seeds, 1 tsp
  • Urad Dal, 1 tsp
  • Red Chillies broken into halves, 2
  • Coconut Oil, 2 tsp
Method:-

Wash the gulla and remove the stalk and cut into big pieces. Immerse these pieces in a vessel of water to avoid discolouration
Soak a lemon-sized ball of tamarind in adequate lukewarm water for 10-15 minutes and extract the juice.
Slit the green chillies
Chop the coriander leaves

In a kadhai, dry roast the urad dal on medium heat till it changes colour. Keep aside
Next dry roast the coriander seeds followed by the cumin seeds and fenugreek leaves on medium/low flame till they change colour. Keep aside
Add 1/2 tsp of oil to the kadhai and on medium heat roast the Byadgi Red Chillies till they become crisp
Allow all the above roasted ingredients to cool
Transfer to a small mixer jar and grind to a fine powder. Keep aside

In the same kadhai, heat 2 cups of water then add tamarind extract, turmeric powder, jaggery, slit green chillies and salt and bring to a boil
Next add the gulla pieces, cover and cook on medium heat till they get done but take care that they don't get overcooked
To this add 3 tbsp freshly ground powder and 1 tbsp of coconut oil and mix well
Then add the chopped coriander leaves, curry leaves, asafoetida and the cooked dal
Mix well and let it come to a boil
Lower the heat and let it simmer for a couple of minutes

MATTI GULLA PODI

MATTI GULLA PODI

Gulla is a variety of brinjal that is seasonally available in our home district of Dakshina Kannada and Udupi in the coastal belt of Karnataka. History has it that this special type of brinjal was cultivated first in the small village of Mattu, near Udupi. It is from here that this vegetable got its present name of Matti Gulla. For more on the origins of Gulla, you may like to see this very informative article in The Mangalorean.

Matti Gulla preparations are considered a delicacy of sorts in our Konkani cuisine. Elsewhere in this blog, you will find recipes for other favourites from Konkani cuisine such as Batate Saung, Vaingana Puddi Sagle, and Cabbage Sannan.

Today's recipe is for an easy to make shallow fried side dish, which we call Podi, using Matti Gulla.

Ingredients:
  • Matti Gulla, medium-sized, 1
  • Rice Flour, 1 tbsp
  • Chilli Powder, 2 tsp or to taste
  • Turmeric Powder, 1/8 tsp
  • Hing (Asafoetida) Powder, 1/4 tsp
  • Medium Rawa (Semolina), 1 and 1/2 tbsp
  • Salt, to taste
  • Oil, as required to shallow fry
Method:

Wash the gulla and discard the stem. Pat the gulla dry and slice it into roundels of uniform thickness. These roundels should not be too thick or too thin.

Mix well together the rice flour, chilli powder, turmeric powder, asafoetida powder, salt, and a little water to make a paste, in a bowl
To this add the gulla roundels one by one and coat them uniformly to marinate them
Keep aside the coated gulla roundels for 5-10 minutes
Heat the tawa and grease it with a little oil,
Dust each of the coated gulla roundels (on both sides) in the rawa and shallow fry them
Once the lower side of the gulla gets done, flip and shallow fry the other side as well by drizzling oil around it as required
Transfer to serving plate
Serve the Matti Gulla Podis as an accompaniment /side dish with the main meal
